Brinjal and green bean salad

Ingredients:

Brinjal and green bean salad
Ingredients:
1 large brinjal/aubergine/eggplant, sliced n grilled
1 bag extra fine green beans, grilled
A few pepperdews
1 disk feta
Handful chopped pecans
*optional: avo slices

 

Dressing:
1/3 cup Extra Virgin olive oil
2 TB white vinegar
Zest & juice of 1 lemon
Handful of chopped fresh coriander/dhania
1 red chilli, finely chopped
Pinch of sugar
Salt n lemon pepper to taste

Method:

Arrange veggies on a platter
Add your dressing and top with some feta chunks and torn up pepperdews.
Add chopped pecans for crunch amd texture and some whole dhania if you have
